RECIPE: Garlic Chicken Penne With Asparagus

It’s dinner time! This is so easy to make and so easy to pack and save for leftovers. This pasta dish is our go-to for easy dinners with friends or a quick meal prep for getting things in line for a busy week. We use chicken in this recipe, but it’s just as good to make vegetarian or substitute in shrimp!

What you’ll need:

1 (16 oz) box dried penne pasta

2 skinless boneless chicken breasts – cut into strips

5 tablespoons olive oil

2-3 cloves garlic

1 bunch asparagus – trimmed and cut into 1 inch sections

½ onion chopped

3 strips bacon roughly chopped

Salt and pepper

Cayenne pepper (optional)


  1. Bring a large pot of lightly salted water to boil. Add pasta, and cook until al dente, about 11-13 minutes or until al dente. Drain, drizzle with oil, and set aside.
  2. Warm 3 tablespoons olive oil in a large skillet over medium-high heat. Stir in chicken, and season with salt, pepper. Cook until chicken starts to brown, about 5 minutes. Add bacon
  3. Then stir in asparagus and garlic. Cook until asparagus softens. Add cayenne pepper to taste
  4. Stir chicken mixture into pasta, and mix well. Let sit about 5 minutes. Drizzle with 2 tablespoons olive oil, stir again. Enjoy!!
